(ANSA) – Rome, 8th May – New location and new staff for the 5-star Acquolina fish restaurant, after 12 years at Collina Fleming it settles in Ripetta district. Introduction of the two-for-one concept, after the agreement with Andrea La Caita, owner and manager of the La Sibilla restaurant in Tivoli. Since 10th of May AcquaRoof has been launched, near The First Luxury Art Hotel, a five-star hotel renowned for the panoramic terrace with its 360-degree view. Behind the drop of water logo, there is an experienced staff which provides a «cuisine d’auteur» managed by the chef Alessandro Narducci, together with Angelo Troiani and Andrea La Caita. The menu offered is placed under the label of food safety and genuineness and respect the Troiani family’s values : freshness, home produce, innovation, seasonal products, consistance and sustainability.
In charge of a 16-person brigade, all under 27, and a restaurant of about 100 places, Alessandro Narducci. He was born in 1989, received a Michelin star in 2016 and he worked at « Waldord Astoria » of Rome, in the staff of the starred chef Heinz Beck in the Emirates and for the Traioni family at « Il Convivio ». The wait on table is managed by Andrea La Caita, a Roman born in 1976. He belongs to the Italian Association of Sommelier and holds a Master degree in International Relations at the Bocconi University. Furthermore he opened the Vesta restaurant in Tivoli, in collaboration with the Traioni family, which was awarded with a Michelin star only two years after. It had to close in 2009 because of a landslide. In the capital city of Italy, the Troiani family is also owner of the « Il Convivio » restaurant, the Coquis culinary school and now, with the new agreement, of the whole food&beverage offer of The First Luxury Art Hotel in partnership with Alessandro Narducci and Andrea La Caita.
